The Greatest Queso That Ever Lived

Ingredients

1/2 white/yellow onion

1/2 green pepper

3/4 lb. lean ground beef or sausage browned and drained*

2 lbs. block of Velveeta cubed

2 cans (10 oz.) Rotel original, mild, or hot- whatever your preference, drained

1 can (7 oz.) diced roasted green chiles

Directions

Heat oil over medium-high heat. Saute the onion and pepper until it’s lightly brown and soft.

Spoon the vegetables into the bottom of the mini crock-pot or dish you will be preparing the dip in.

In the same skillet, cook the ground beef (or sausage) until browned. Strain, then spoon into the dish with the vegetables.

Pour in chilis and diced jalapenos.

Cut Velveeta into large cubes and add to the beef and vegetables

Cook over low heat until the cheese has melted and ingredients are well combined (stir occasionally).

Notes

The queso starts with peppers, onions, and ground beef or sausage cooked down in a skillet. Then you add some diced jalapenos (have you ever bought them diced like this? Love them!), and a can of chili.
